1. Preheat oven to 400 degrees F. Line two baking sheets with non-stick foil or parchment paper.

6. Lightly brush the tops of each cookie (one at a time) with olive oil to prevent them from sticking to one another and bake for about 25 minutes, turning sheets halfway through.

In a small bowl, mix the oil and garlic. Heat a large skillet over medium heat with the olive oil mixture then add the anchovies.

Add the garlic, thyme, and oregano to the pan then stir in the wine. Reduce by half then add the mushrooms.

Stir in the broth and bring it to a boil. Add salt, pepper, capers, and cheese to taste then reduce heat to low-medium-low simmer for about 10 minutes or until the liquid has reduced considerably.
