1. Preheat oven to 400 degrees F. Line two baking sheets with non-stick foil or parchment paper.
2. Whisk together the eggs and buttermilk in a large bowl until the mixture is smooth and pale yellow in color, about 1 minute. Stir in the parmesan cheese if using it (if you don’t want it to get too salty).
3. Sift the flour, baking powder, and salt into another bowl, then stir with a fork until all of the ingredients are moistened and well-mixed; set aside.
4. Pour half of the flour mixture into the egg-buttermilk mixture. Stir with a wooden spoon until incorporated, then stir in the remaining flour mixture.
5. Place a handful of bread crumbs on your palm and flatten it into a ball; roll it out to about 3/8-inch thick. Cut with cookie cutters or scissors into any shape you’d like, then place it on the prepared baking sheet and repeat with the remaining bread crumbs.
6. Lightly brush the tops of each cookie (one at a time) with olive oil to prevent them from sticking to one another and bake for about 25 minutes, turning sheets halfway through.

In a small bowl, mix the oil and garlic. Heat a large skillet over medium heat with the olive oil mixture then add the anchovies.

When they start to turn golden remove them from the pan and set them aside for later use.(The anchovies may be used as a topping for pasta or other Italian dishes.)

Add more oil to the skillet, then the mushrooms and sauté them until they are browned.

Add the garlic, thyme, and oregano to the pan then stir in the wine. Reduce by half then add the mushrooms.

Stir in the broth and bring it to a boil. Add salt, pepper, capers, and cheese to taste then reduce heat to low-medium-low simmer for about 10 minutes or until the liquid has reduced considerably.
*Note: If you want a smooth sauce you can pass it through a blender (in batches) or use an immersion/stick blender.
